Lets Cook!

I'm not exactly sure when it happened.

Or how...

But all of a sudden...

I can cook.
Not microwave ramen, not make mac and cheese, but honestly cook!

Or at least I'm told I can.

The eaters in my life seem to be pleased.

So, with every new recipe I find I will be sharing with it with you.

and being that I kinda love cooking...

So Here Are Some Recipe's I've Worked Up

Verde Smothered Chicken 
Being that I am trying to ween myself back onto meat I have been eating a lot of chicken, turkey and fish lately so the recipes I put on here will probably reflect that.

This was roughly adapted from a recipe I found online. This chicken recipe was named Cheesy Avocado Salsa Chicken, but I changed it up and made it a whole lot more green. This was the first time I've made chicken in a frying pan, and it turned out fantastic. My roommates all seemed to really love it, I know I did. I wish I had taken pictures to show off the creamy cheesy awesomeness that it was... maybe next time. Enjoy =)

Makes 4 servings


What you need:
  • 4 boneless skinless chicken breasts
  • seasonings (I used cilantro, savory and pepper)
  • 2 tbs olive oil
  • 16 oz verde salsa
  • 4 slices of tomato
  • sliced provolone cheese
  • 2 avocados (sliced and pitted)
  • 1 cup of rice (or 4 servings)
  • 1 tbs of butter or margarine


What you do:
  1. Put oil in the pan to heat. Season your chicken. (I sprinkled a generous amount of cilantro, pepper and savory onto each side)
  2. Cook chicken in pan until browned on each side (about 6 minutes per side)
  3. While side one of your chicken is cooking start cooking rice. I used 1 cup white rice in 2 cups of water on the stove top, follow your rice packaged directions.
  4. Flip chicken
  5. Slice your tomatoes and avocado during this time.
  6. Once both sides of chicken are browned, flip the chicken once again and cover each chicken breast with verde salsa. (I saved some of the salsa to mix into the rice)
  7. Put slices of avocado, tomato and cheese on top of each chicken breast. Cover pan and let cheese melt (and chicken finish cooking inside)
  8. Check on rice, if preparing white rice like I did, you can at this point mix in verde salsa and seasonings. I again used salsa, cilantro and savory.
  9. Put rice on plate and top with your Verde Smothered Chicken
  10. Enjoy!





Red Velvet and White Chocolate Chip Cookies
Red Velvet.... White Chocolate.... Need I Say More?


I actually found these on StumbleUpon and they were so pretty looking that I had to try and make them. plus with a week like the past week in my life, sometimes you just have to indulge yourself and others.


What you need:
  • 1 box of red velvet cake mix
  • 1 cup all-purpose flour
  • 2 sticks unsalted butter, softened
  • 1 egg
  • 2 cups of mini white chocolate chips

What you do:
  • Preheat oven to 350 degrees.
  • In a mixing bowl, add butter and mix it until its soft and fluffy.
  • Slowly add in the cake mix and flour.
  • Once combined, add your egg and mix it all up completely.
  • Add white chocolate chips and mix for a minute or so until well mixed together.
  • Form dough into one inch balls, and place into the oven for 8-15 minutes (I did mine for 12).
Make sure to pour yourself something to drink once they're done, these cookies are VERY rich.
